Mt. Defiance Cider & Distillery has been producing award-winning artisanal spirits in Middleburg, Virginia since 2014, focusing on the revival of classic ‘lost spirits’ that had fallen out of favor due to post-Prohibition mass production methods or outdated laws. They use traditional recipes with signature twists and grow many of the herbs used in their recipes on their own property, sourcing quality ingredients locally whenever possible.
