Pauley Hollow Distillery, LLC is the first legal distillery in Pike County, Kentucky, and a small family operation located in Forest Hills that specializes in premium bourbon and moonshine rooted in Eastern Kentucky heritage. The CEO and COO are involved in every aspect of the process from selecting and grinding grains to cooking the mash, distillation, bottling, and labeling, using local spring water from a 100-year-old hand-dug well and hand-selected grains to produce quality spirits. They offer a farmhouse tasting room on the Moonshine Trail and produce spirits using historical recipes, including water from the Randall McCoy Well tied to Hatfield & McCoy lore.
