About
Real Spirits emerged from deep roots of craft brewing in the Texas Hill Country. After 21 years of building a solid foundation of beer, Real Ale Brewing launched the Real Spirits Distilling program in 2017. All Real Spirits starts with a foundation of Real Ale beer—brewed, fermented, distilled, aged, bottled, and served on-site at the brewery and distillery in Blanco, Texas. The program features a unique reciprocal relationship with Real Ale brewing, where whiskey barrels are used to age beers for the barrel aging program, continuing a life cycle that infuses the Real Ale personality and philosophy every step of the way.
Spirits
Distiller's Edition
Crafted from three distinct whiskeys balanced by either corn, rye, or wheat, capturing the warmth and familiarity of a bourbon with the mash bill of a straight malt whiskey. Delivers a rich, malt-forward expression layered with notes of Mexican vanilla, caramel, macadamia, coconut, and hints of crème brûlée and nutmeg.
Grain To Glass Gin
Bright with citrus and juniper, lifted by soft menthol-floral notes, and finished with a touch of warm spice. Exceptionally versatile: Martini-ready, seamless in a Negroni, and crisp on the rocks.
Old Tom
Gin. A sweetened, classic style gin with richer mouthfeel and complexity.
Petite Touche'
Straight Malt Whiskey. A refined expression of the grain-to-glass process.
Rye Grain
Straight Malt Whiskey. Crafted with rye for a spicier grain-forward profile.
Signature Whiskey
Bold yet smooth, with layers of caramel, vanilla, and spice. A perfect companion for a Manhattan or Old Fashioned, and easy to enjoy neat or on the rocks. This is the Hill Country take on a classic American profile.
Single Barrel Whiskey
Limited first batch whiskey, individually barreled and aged. Once matured, select barrels are harvested and mingled together for bottling, offering a unique expression of the Hill Country terroir.
Texas Pecan Old Fashioned
A bar-quality Old Fashioned that’s consistent from the first pour to the last. Rich, slightly sweet, blended with house-made pecan-sage syrup. Toasted Texas pecans bring warmth and natural nuttiness, while sage adds a subtle herbal note that balances sweetness and enhances the whiskey’s layered malt and spice character.
Totem
Inspired by Oaxacan pechuga, reimagined through a Hill Country lens. Each batch is distilled with select Texas fruits, herbs, and spices, while a wild hog ham is suspended above the wash to enrich texture and depth. Expect notes of sweet malt, tropical fruit, warm spice, a gentle floral lift, and a subtle thread of smoke.
