Established in 2011, Cornelius Pass Roadhouse Distillery operates from a historic granary barn built by the Imbrie family in the 1850s in Hillsboro, Oregon. The distillery features a copper still originally sourced from an old barn in Cognac, France, mounted on recycled bricks from other McMenamins properties. Known for Grateful Dead-inspired craft spirits, the distillery’s first release was White Owl Whiskey, and its experimental whiskey recipes were developed alongside beers from their adjacent brewery.
