James Bay Distillers is an independently owned craft distillery located at Paine Field Airport in Everett, Washington, just north of Seattle. They specialize in small-batch gins, whiskies, and vodkas distilled in-house with superior ingredients, earning top ratings in national and international competitions across Los Angeles, New York, Hong Kong, Tokyo, and the United Kingdom. Each new spirit undergoes a one to two-year development process before release, and their Washington-distilled spirits have been featured seven times by TrendHunter for innovation.

Cadboro Chocolate Whisky

An organic chocolate-infused whisky infused with sustainable cacao from Ecuador, filtered at 12-micron level to leave a clear whisky with a persistent chocolate note in the mid-palate, winning a 94-point gold medal from PR%F Competition.

Choco Haze Vodka

A seasonal organic-chocolate and hazelnut flavored vodka released in October 2022, available at the distillery tasting room at Paine Field.

Everett Liquor Co. Bourbon

A 5-year single cask 100% corn bourbon whiskey with a vintage 1902-inspired label honoring the historic Everett Liquor Co., featuring rich aromas with initial flavors of brown sugar, Juicy Fruit gum, cherry, vanilla, stone fruit and apricot, winning Gold Medal at John Barleycorn competition in 2024.

Finocchietto

A double-gold award-winning 80-proof Italian recipe digestif boasting notes of anise, fennel and almond flavors, reminding drinkers of a biscotti in a glass.

Galloping Goose Canadian Whisky

A 3-year aged Canadian whisky made to a bourbon recipe, opens with caramel and vanilla notes then moves to baked chocolate with a lingering honey finish, earning a 97-point double-gold medal from PR%F Competition and named Canadian Whisky of the Year at the Asia International Spirits competition in 2020.

Galloping Goose Reserve (Blue Goose)

The cognac-cask finished version of Galloping Goose with 36-months of finishing in cognac casks that previously held Kentucky bourbon and French cognac, delivering exceptional notes of plum, dark cherry and dark chocolate.

Gintrigue Gin

A barrel-aged gin aged for 31 months in ex-bourbon/ex-cognac barrels that previously held Kentucky bourbon and French cognac, a 95-point gold medal winner at Asia International Spirits Competition and the ‘Fifty Best’ competition in New York City.
