About

Located at 501 W Spruce Street in Dodge City, Kansas, Boot Hill Distillery is a craft distillery operating out of Dodge City’s historic former City Hall building. They embody a “soil to sip” philosophy, growing grain on their 5th-generation family farm in Western Kansas just 50 miles from the distillery, and craft award-winning spirits using Kansas-grown ingredients aged under the region’s hot, dry summers and bitter cold winters.

Spirits

Barreled Gin

Bridging the gap between whiskey and gin, this 90 proof gin is aged in barrels to develop layered, complex flavors.

Bourbon Whiskey

Kansas’ first soil to sip craft bourbon, made from a 51% corn, 49% wheat mash distilled from homegrown grain and aged in new charred American White Oak barrels, delivering caramel, fruit, and spice notes at 90 proof.

Gin

A New Western gin crafted from Kansas-grown grain, offering a distinctly modern and botanical-forward gin profile.

Prickly Ash Bitters

A resurrected historic recipe featuring prickly ash bark, buchu leaves, senna, coriander, and other unique botanicals, crafted as a sweet and bitter American amaro at 70 proof.

Red Eye Whiskey

A frontier-style whiskey at 80 proof created by blending bourbon new make aged in various barrels for six to 12 months, offering approachable depth and nuanced flavors.

Straight Wheat Whiskey

A 100% straight wheat whiskey crafted from high-quality hard red winter wheat grown on their Kansas farm, aged over two years in new American white oak barrels for a complex and robust spirit at 100 proof.

Vodka

Simultaneously wild and civilized, this vodka is made from homegrown Kansas grain, balancing boldness with refinement at 80 proof.

White Whiskey

A bold, youthful grain spirit with a brief oak finish, representing the distillery’s unaged or lightly aged expression.
