About
Cooper’s Chase is the oldest active distillery in Nebraska and the first distillery since prohibition, founded in 2009 by Doug Throener and Jim Brozek who helped craft the state statutes to open a distillery. After 14 years of operation, Johnnie Byrd Brewing Company purchased Cooper’s Chase brands from its founder in late 2023 and relocated the operation from West Pointe to Wayne, NE, continuing to craft vodka and bourbon while expanding their own grain-to-glass spirit lineup.

Cooper's Chase Vodka
Distilled four times and filtered six times, then blended with Nebraska aquifer water to create a wonderfully neutral vodka at 40% ABV.
Johnnie Byrd Cinnamon Whiskey
Built on their lighter whiskey base with cinnamon added at barrel strength, offering light cinnamon notes, woodiness, and heavy vanilla tones at 35% ABV.
Johnnie Byrd Gin
A bright and delicate gin made from Midwestern white wheat and Nebraska honey, distilled 13 times to ensure a beautiful balance of light botanicals and juniper berries at 40% ABV.
Johnnie Byrd Honey Shine
A unique spirit made from Nebraska honey fermented and distilled with butterfly pea flower that changes color from purple to ultraviolet blue based on pH, at 35% ABV.
Johnnie Byrd Light Nebraska Whiskey
A light single-malt whiskey aged at least 3 months in lightly toasted barrels, approachable for those new to neat whiskey or ideal for cocktails at 35% ABV.
Johnnie Byrd Vodka
Made from Midwestern white malt and Nebraska honey, distilled at least six times with a slow carbon filter for a smooth vodka with little to no bite at 40% ABV.
Johnnie Byrd Wisner Whiskey
A fusion of bourbon wash (corn, barley, rye) speed-aged 3 to 6 months in the style of Irish whiskey, producing a uniquely rich and roasty spirit at 40% ABV.
