Nobletons Distilling House is an estate distillery in Union, Missouri, founded by Demitrius Cain in 2016 on his family’s 850-square-foot farmhouse property. As an unadulterated end-to-end distillery, they grow their own heirloom grains (including a Scottish rye varietal), malt them themselves, ferment for 48 days at low temperatures, and distill using custom Armagnac-style copper vacuum stills that boil at 82°F instead of the standard 175°F to preserve viscosity and texture. Their Ozark Highlands-certified spirits are aged in Missouri-made barrels and bottled in the region, with a history tracing back to 1836 family mash bills.
