Witness Distillery is a grain-to-glass craft distillery located in historic downtown Vandalia, Illinois, operating from a restored 1870s building. They craft award-winning whiskeys (bourbon, rye, and limited releases), rums, and flavored vodkas using pristine spring water from a local Fayette County spring and hand-selected locally-sourced grains, with spent mash returned to their farm to feed cows.
