A family-owned fruit-based distillery located in Chicago’s Fulton Market neighborhood, specializing in European-style fruit brandies known as eau de vie. Founded in 2013 by father-daughter team Charlie and Jenny Solberg, the distillery draws from Austrian distilling traditions and produces spirits made exclusively from fresh fruit—approximately 25lbs per bottle—without any additives, sweeteners, or neutral spirits.
