Cherry Applejack

Made by soaking sweet Bing cherries in 3-year-old Applejack, bringing it down to 35% ABV, then aging an extra year in quarter casks. With 4 years total production time, it features rich black fruit flavors blending into toasted oak and a slightly spiced finish, with a robust body that’s thick but not viscous.

Core Black Raspberry Vodka

Fresh, homegrown black raspberries are macerated in Core Vodka then redistilled in the French ‘framboise’ style, with a trace of black raspberry juice added for a magnificent violet color at 40% ABV. This unsweetened, naturally colored spirit provides profound aromas and a dry flavor of juicy black raspberries.

Core Gin

Distinctive because it’s made from 100% homegrown Hudson Valley apples rather than grains, giving it a softer, smoother mouthfeel. Distilled four times with just 3 botanicals (juniper berry, coriander, and lemongrass) at 40% ABV, it features a soft floral aroma with subtle juniper tang and a smooth, well-balanced finish. It’s gluten-free with no charcoal filtration, sugar, or additives.

Core Vodka

Made from 100% homegrown apples, this distinctive vodka is triple-distilled from hard cider with a singular filtration, featuring a bright floral nose, dry mid-palate, and long clean finish at 40% ABV. A single 750ml bottle is crafted from over 60 lbs of fresh apples and is lightly filtered, unsweetened, and unadulterated.

Cornelius Applejack

Made from 100% homegrown apples, this applejack is carefully double-distilled from fermented cider in small batches, then aged for 5 years in 50-gallon American oak ex-bourbon casks at 60% alcohol before being carefully diluted to 40%. It’s more like a bourbon whiskey than a brandy, offering a sweet, distinctive spirit that’s smooth and warming with no charcoal filtration, sugar, or additives.

Distiller's Reserve Applejack

A classic batch of the finest applejack, distilled twice and aged 11-13 years since 2010, bottled at an ideal sipping strength of 40%. Full-bodied with depth and character unlike the standard version, it has a brandy-like profile with rich vanilla notes and a captivating warmth, enjoyable chilled or neat.

John Henry Bourbon Whiskey

Sourced from Taconic Distillery with a mash bill of 75% corn, 20% rye, and 5% other grains, this bourbon is aged for 3 years in original 52-gallon American oak barrels of medium char #3 at 42% ABV. Non-chill filtered with natural color from the oak casks, it develops rich aromas of toasted oak, walnuts, and buttered popcorn.

John Henry Single Malt Whiskey

Named after the farm manager John Benjamin Henry, this small-batch whiskey is double-distilled from 90% two-row malted barley and 10% peated malt, then rested in new oak and aged in applejack barrels for 5 years at 42% ABV. It offers a wonderful balance of malt and smoke, making it approachable for both connoisseurs and newcomers.

Peach Applejack

Fresh-picked peaches are macerated in Applejack for a year of soaking and flavor marrying, then filtered and aged in barrels at 30% ABV. This sweeter brandy gets its full-bodied flavor from honest stone fruit with rich flavors of spice and oak from 3 years total barrel aging, making it a true fruit spirit.

Rare Pear Brandy

A pure distillation of Bartlett pears, crushed whole and fermented on the skins, minimally distilled twice to retain fresh pear aromas. Aged 2 years in charred American oak barrels with a single filtration at 40% ABV, it’s surprisingly dry with a long toasted oak finish reminiscent of European-style brandy.
